Using any of the commercially available backup software systems on the market, you should be able to select whichever folders you want backed up at a given time of day, or before a shut down of the system. Solutions may differ based on operating system, but this is pretty basic backup feature set to enable. Thats a really unhelpful position to be in. You don't want to be backing up while editing. If the system locks up and restarts you've wiped your attic.
I'd look at a redirected folder to point the attic somewhere safe!
