What is the best export setting to expert an image in a (hdv)sequence to a sharp photo (for ex: jpeg or pict and should it be for ex. single field)?
No, you don't want to use single field. Just export out as a high res JPEG and open the photo in photoshop and use its deinterlace filter if you want to blend the fields.

Hi,
I took the 210 - Graphics & Mattes class a few years ago, and they taught us to export for still photos using square pixels, RGB color levels, and single field. I wouldn't expect miracles, though. Video is pretty low resolution compared to still photos.

You don't want single field though Carl because the anti-aliasing won't be crisp. You need to do a blend of the fields for proper anti-aliasing.
One great way to deinterlace would be to use Avid's FluidMotion. Deinterlace (part of) the source clip in Avid, then export both fields, not single, and then there's no need to deinterlace in Photoshop. Make sure to export as Square Pixels and at RGB levels.

Yes, HiDef should definitely get you better pictures than standard def. However, Hi-Def is either 1280x720 or 1920x1080, while any decent still camera will easily give you 3500x2500 pixels.
